Tunisian food is very much inspired by the history of its peoples. Each group of people that has lived in this land – from the native Berbers and ancient Phoenicians to the temporary invaders such as the Romans and the French – have had an influence on the cuisine. Often, this is expressed in the herbs and spices used in preparing this food.

Like much of Mediterranean cuisine, the food here is often spicy. One popular condiment used in Tunisian cooking is harissa, a mix of hot peppers, garlic, olive oil and tomatoes – with the emphasis on the peppers. Most Tunisians believe that the spicier food is, the better it tastes!

A few Tunisian specialties are:
  • couscous: a mixture of ingredients including herbs and spices, meat, vegetables, and, of course, couscous;
  • shakshouka: poached eggs in a blend of herbs and spices, onions and tomatoes. It makes a versatile meal served at breakfast or dinner;
  • felfel mahchi: served in many Arabic countries but spiced up in Tunisia with harissa. It consists mainly of stuffed peppers.
